Low Calorie Breakfast Sandwich (gluten free)

In an effort to eat more healthfully,  AND find a meal that will fill me up and keep me satisfied all morning...I have come up with this great breakfast sandwich! It's easy to make and delicious.

Here's what you will need:

Morning Star original Sausage Patties (these are vegetarian soy protein)
Egg substitute
Multi-grain or whole wheat english muffins (if you are gfree you can find gfree english muffins in the freezer section of your health food store. Another option is to use a gfree bagel)
I can't believe it's not butter Spray
Salt free seasoning blend

 Follow directions on box of sausages and cook in microwave. Set aside.
 Using the butter spray, spray the bottom of a small non stick skillet
 *Here is the seasoning I swear by for eggs. Really good.
 Pour 1/4 cup of the egg substitute into your prepared pan
 Cover and cook on low to medium. You will see that the eggs are starting to cook.
 Before the egg is cooked all the way through, sprinkle with the seasoning blend.
 put lid back on and before you know it your eggs will look like this. The key is to keep the heat on low so the eggs don't burn underneath.
 Next fold over once using a spatula
 ...and again....set aside.
 toast the english muffins, lightly spray with butter spray.
 Top with the egg and sausage. (as a side note, you could add a small piece of  reduced fat cheese at this point)
Finish it off by putting the other half of the english muffin on top. Enjoy!

Happy Birthday to Kyle!

 Kyle turned fifteen on Monday, but we decided to wait until this weekend to take him out to dinner. Our tradition for birthdays is the birthday person gets to pick anywhere they want to go out to dinner. In our family it's almost always the same choice...PF CHANGS! Here are a few pics of my handsome, sweet boy before we headed out for dinner. Kyle's dinner choices tonight were wonton soup, crab wontons, chicken lettuce wraps and crsipy honey chicken with rice. Kev and I threw in an order of our personal fav which is the Mongolian Beef and we had one fabulous meal. Kyle topped of his dinner with a desert "shot" which is a tall shot glass full of desert. He chose the chocolate mousse desert shot. We all throughly enjoyed our time out together celebrating Kyle.
